That’s A Wrap!

One thing my girls love and will always eat are chickpeas! Which also makes me love them too. Not only are they among the world’s healthiest foods, being a great source of fiber and protein, they are also very versatile and easy to incorporate into many dishes, throw in salads, or make into delicious  hummus. If you haven’t made friends with the chickpea yet, I advise you do.

Tonight I wanted to share my easy recipe for chickpea tacos or wraps. We use wraps more often because it is a lot less messy (especially for the girls), but you could even use these chickpeas in a taco salad or assemble them with lettuce, salsa and tomatoes in taco shells.

Spicy Chickpea Wraps

Makes 6 wraps

  • 15 ounces chickpeas, drained and rinsed
  • 1 tablespoon soy sauce or shoyu
  • 1 tablespoon lemon juice
  • 1 1/2 tablespoons water
  • 1 tablespoon chili powder
  • 1 tablespoon dehydrated minced onion flakes
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon fine sea salt
  • 6 whole grain wraps
  • 6 leaves romaine lettuce
  • 1 1/2 cups salsa of your choice

Directions

Preheat oven to 400°F. In a small dish, whisk the soy sauce, lemon juice, water and spices together. Add the rinsed chickpeas and toss until well and evenly coated. Place chickpeas on a lightly greased or parchment paper lined baking sheet and bake for 15-20 minutes, until browned and crunchy.

Assemble the wraps with the romaine lettuce, salsa and chickpeas.
