I LOVE banana bread! It is my favorite thing to bake and to eat too. I often make Walnut Banana Bread for us to have and I also bake that recipe regularly for my parents as well. We all find that it is always especially good with a nice hot cup of coffee.
One day, I was thinking up a variation for our favorite recipe. I have already made a chocolate chip banana bread before so I figured that I would add cocoa to the batter to make a double chocolate banana bread. I knew that would go great with coffee. Then I figured why not take it over the top and try adding coffee right into the loaf?
The result was this ultimate treat! Mocha Chocolate Chip Banana Bread.
Mocha Chocolate Chip Banana Bread
A moist banana loaf flavored with coffee and chocolate! Made with whole wheat flour and pure maple syrup. A decadent and delicious vegan dessert bread that tastes just like chocolate cake minus the guilt.
Makes one 9 x 5 loaf
- 3 overripe bananas
- 1/2 cup pure maple syrup
- 1/4 cup almond milk or other non-dairy milk
- 1/4 cup sunflower oil
- 2 teaspoons vanilla
- 1/3 cup instant coffee (I used decaf)
- 1/4 cup cocoa powder
- 1 1/2 cups whole wheat flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon sea salt
- 2/3 cup vegan chocolate chips
Preheat the oven to 350F. In a large mixing bowl, mash the bananas then add the maple syrup, milk, oil, and vanilla, whisking until combined. Add the instant coffee and cocoa powder and whisk again until combined. In a separate small mixing bowl, combine the flour, baking powder, baking soda, sea salt and chocolate chips. Add the dry ingredients to the wet ingredients and mix until just combined, careful not to over mix the batter. Pour the batter into a 9 x 5 loaf pan and bake for 45-50 minutes. Loaf is ready when a toothpick inserted comes out clean.
I made quite a few versions of this loaf to get the coffee flavor just right. Craig and I both enjoyed it without the chocolate chips as well for a less decadent, sugar-free bread, but both ways are delicious. The girls love the chocolate chip one.
