Today my little Kesara is five years old!
Every year I end up making a vegan marshmallow fondant cake for each of my girls’ birthdays. They sure take a long time to do, but it seems that it has turned into a tradition now. A tradition that I can’t seem to break because they love the fancy cakes mommy makes so much.
Each birthday is always about the cake that they are going to get. This year I had no idea what kind of cake to make (it is getting harder now that I have done so many) so I decided on an under the sea theme. All of my girls are still obsessed with Strawberry Shortcake (Kesa even wanted yet another Strawberry Shortcake cake) so I thought that it would be cute to make fondant mermaid tails for the Strawberry dolls and turn them into mermaids.
Autumn made the pretty little flowers for their hair.
We also made seaweed, a crab, and some starfish too. The ‘sand’ on the bottom is organic coconut sugar.
Finally, we added some sea shells and a few of their toys (a turtle and a seahorse) to complete the look.
It took about 3 1/2 hours from start to finish to bake the cakes, make the marshmallow fondant and then decorate.
I also made a Cinnamon Spice Frosting to frost the cakes with. All of the recipes (except the fondant) are refined sugar free and wholesome, made with whole wheat flour and sweetened with pure maple syrup.
The sugary marshmallow fondant icing is always a birthday treat that they look forward to. The kids love it! Us adults can just peel it off. It is very tasty though!
I am happy to see this little girl so impressed with her cake! After Autumn’s eighth birthday cake I swore never to tackle the fondant again, but alas, I have finished yet another (mostly wholesome) vegan fondant cake. I think this is one of my best ones too!
