Today I had planned on starting to eat more raw vegetables, since I have been eating way too much birthday cake these days. Whenever I make cake, it turns out that I am the one who ends up eating most of it. One of my favorite ways to eat raw vegetables is in wraps with delicious hummus, so after I took the girls out for a walk this morning we went to the store to buy my favorite sun-dried tomato hummus.
They were out.
I could’ve been bummed out, but instead I remembered how I had wanted to make my own sun-dried tomato hummus and already had the ingredients in my cupboard I have just been too
lazy about it busy. I have already created my own creamy garlic and roasted garlic and red pepper hummus recipes. When we walked in the door I went straight to work. 20 minutes later I was in eating heaven, having created my own delicious sun-dried tomato hummus.
No more store bought hummus for me!
Sun-Dried Tomato Hummus
A delicious smooth hummus recipe with the sweet flavor of sun-dried tomatoes.
Makes about 3 cups
- 1 (85 g) package sun-dried tomatoes
- 1 1/2 cups boiling water
- 1 (540 ml) can chickpeas, drained and rinsed
- 1/3 cup tahini
- 1/4 cup sunflower oil
- 2 tablespoons lemon juice
- 3 cloves garlic, pressed
- 3/4 teaspoons sea salt
Place the sun-dried tomatoes in a medium sized bowl. Pour the 1 1/2 cups boiling water over top and soak them for 10-15 minutes, until softened.
While the tomatoes are soaking, place the drained chickpeas, tahini, sunflower oil, lemon juice, garlic and sea salt together in a food processor. Add the sun-dried tomatoes and 1/2 cup of the soaking water into the food processor. Blend together until smooth. Store in a container in the fridge for up to 5 days.
