Mini Oatmeal Chocolate Chip Cookies

When you have kids (or if you are just trying to practice self-control) everything is better mini. As you know, I am always baking and often baking cookies. For something different, I decided to make mini cookies for the girls and for Autumn to take in her lunch.

Mini Oatmeal Chocolate Chip Cookies

Chocolate chip cookies are classic. I however feel better about feeding them to my kids with the goodness of whole wheat flour and oatmeal. These are a healthier, mini, version of everyone’s favorite cookie and ready in under 8 minutes!

Makes about 30 mini cookies

Ingredients

  • 1/4 cup margarine
  • 1/3 cup brown sugar
  • 2 tablespoons unsweetened applesauce
  • 1/2 cup quick oats
  • 1/3 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1/3 cup mini (non-dairy) chocolate chips

Directions

Preheat oven to 350F and line a baking sheet with parchment paper. In a medium-sized bowl cream together the margarine, brown sugar and applesauce. Add the oats, flour, baking soda and sea salt. Mix until combined. Finally add the chocolate chips.

Roll the cookies into 1/2 teaspoon-sized balls and drop onto the parchment lined baking sheet.

Bake 6-8 minutes, until golden brown.

The girls also decided to have a sleepover in out porch last night. It is a pretty huge porch and since we moved the girls together into a room, we put the extra bed in there. They play in there during the day and pretend that it is their little house. It is quite adorable!

This morning I snuck in there and took a picture of my sleeping angels.

Today I am going to be super busy all day making Kesara’s fondant cake for her birthday tomorrow! It is always a big job and makes a lot of mess but I love making them their own special birthday cakes for their birthday’s. They look prettier and taste better than any store bought cake and it is something that they will always remember.

This year she wanted Strawberry Shortcake again. This will be my third Strawberry Shortcake fondant cake so I think that I will be pretty professional by the time I am through.

  1. Yum! I always make my oatmeal chocolate chip cookies with applesauce, somehow I think it actually tastes better or maybe its just because I know I’m saving some calories-either way yours look great!

  2. I would love to try to make a cake with that fondue. But not sure who I would make it for. Still trying to figure out this gravitar

    • This cake is taking me all day! I started at 10 and am still going. Sometimes I think that I am nuts, but it will look and taste so good! The cake part is healthy and made with maple syrup but the icing has like 5 lbs of sugar in it. The good thing is you can peel it off. The kids won’t be doing that though. I am going to put a post about it if I ever finish.

    • Thanks! No I never have taken any classes, just googled it one day and taught myself. Google has taught me a lot actually. My cake took all day today! I will post a pic tomorrow and a how-to on Monday. 🙂
