Nuts For Doughnuts!

So remember when I was saying about foreseeing many new doughnut recipes in my future? I didn’t know that it meant the immediate future and every day of my future.

The girls are crazy for them! I have to admit I am having fun making them too, even though they are not the most healthy thing in the world. I think that it is OK to live a little and have some fun. I like to eat them plain as a healthy treat, but they are also yummy as the girls prefer them, with a little (or a lot) of glaze. The other day I made a plain doughnut (sweetened with maple syrup) with strawberry icing and this morning it was the same doughnut recipe, but with chocolate glaze and added sprinkles for a treat since today was declared ‘Autumn and Kesa Day,’ a day to do whatever the girls wanted to.

They started the day with dressing in whatever they wanted to. Autumn wore her Belle dress and Kesa wore her favorite dress. I made them chocolate glazed doughnuts for breakfast, which they ate cut up with their forks. After breakfast they danced around the living room to their princess sing along DVD and then we went to town to the store where they were allowed to pick anything that they wanted to buy. Kesa picked a sparkly Christmas dress and Autumn picked a barbie.

We had a nice lunch together, took a nice long walk in the sunshine and came back home to watch a barbie movie. The rest of the afternoon we spent cuddled up on the couch reading a ton of stories and coloring Christmas pictures. It was a fun filled day!

Baked Vegan Doughnuts with Chocolate Glaze

Makes 6 Doughnuts

  • 2 cups whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/2 cup pure maple syrup
  • 1/4 cup non-dairy milk (I use unsweetened Almond Breeze)
  • 1/4 cup unsweetened applesauce
  • 1/4 cup sunflower oil

Directions

Preheat the oven to 375°F. Combine the flour, baking powder, baking soda and seal salt in a large mixing bowl. Add the maple syrup, milk and sunflower oil. Place the doughnut mixture into the corner of a large ziploc bag. Cut the tip of the bag about 2 centimeters wide. Squeeze the doughnut mixture onto a parchment lined baking sheet into the shape of a doughnut. Repeat to make 6 doughnuts and place in the oven to bake for 10 minutes. Allow to cool completely before glazing and adding sprinkles.

Chocolate Glaze

  • 1 cup icing sugar
  • 2 tablespoons cocoa powder
  • 4 tablespoons non-dairy milk

*Whisk the glaze ingredients together in a small bowl until combined and smooth

I think we’ve gone nuts for doughnuts!

  1. This reminds me of my daughter who is 16 and always gobbles up 1 or 2 vegan cupcakes when i make them before she could even eat her breakfast. I think it is so cute to have a autumn and kesa day. I bet they liked that day.
