FULL

I have been testing (and tasting) so many recipes these days that I and everyone else in this house is completely full. I must say that it has been fun though, especially eating all of the cookies. I LOVE the No Bake Chocolate Peanut Butter Coconut Oaties!

This cookbook project dream seems so exciting some days and so impossible on others, when I am breastfeeding my baby and typing with one hand at the computer to finish just a few more pages. Plus there is actual life to take care of, exercise to do, a house to clean and three little girls to raise. After some time spent at the computer I often find my house destroyed. It amazes me how two little people can create such grandiose messes.

Anyway, I was just sitting here tonight wishing that you were here to eat all of this glorious food and test some recipes with me because right now the freezer is also full and this insecure girl could use some words of encouragement and support. This whole dream of mine really intimidates me and I often wonder if I can actually do this.

Sometimes I wish I knew another real live vegan outside of my family or had someone who shared my love of food and cooking to talk to or bake with. Most people just think that I am some crazy vegan granola mom. Not that I deny it.

Mmmmmm Lasagna! We had this Friday night for dinner and the leftovers on Saturday.

And the Extremely Addictive Walnut Banana Bread is the recipe that I bake most often. Everyone loves this bread and I eat it like there is no tomorrow, it is seriously crazy addictive. Today I made three loaves and shared one with my parents. I planned on freezing one loaf for later, but we ate one already and most of the other. It is such a great snack for breastfeeding nutrition and something I enjoyed a lot while pregnant and brought to the hospital to eat after Serafina was born.

Do you ever feel like a lonely vegan where you live? Are you a crazy food lover or baking addict?

Please tell me that I am not alone. 🙂

  1. I am a vegetarian, not a vegan, but I still feel lonely. I live in a rural northern Idaho, and I don’t know of a single vegetarian in my area. The internet is my Holy Grail for recipes and support. Especially your blog. ^_^

  3. Like Amanda I would agree the Internet has also been my saving grace. And you know how I feel about you, your blog and your recipes. Just because we aren’t next doesn’t mean that your alone! Not sure I have tried that banana bread looks like there may be baking in my future!
