How Do I Love Pizza? Let Me Count The Ways.

I love yeasted bread and making my own bread, buns or dough for pizza or cinnamon buns. There is something about the smell of it baking that is just so amazing. Store bought just is not the same. I always say that there is nothing better than home baked goods, fresh and warm from the oven and that is why I am a baking addict.

Today I decided to try yet another variation on pizza, since we all love our pizza so much around here. So far I have made…

Now we can add to our recipe collection, pepperoni pizza stromboli!

I decided to make two stromboli, one for the girls and one for Craig and I to have because we were split when it came to topping ingredients. The girls wanted a pizza stomboli and for ours I just decided to omit the pizza sauce and make a garlic, onion, spinach and cheese stromboli for something a little different. I used the same whole wheat pizza dough recipe as I did for the calzones because it is so incredibly delicious. I also brushed these babies with Garlic Herb Oil before baking to make them even more yummy and add more garlic flavor!

I didn’t know how huge these would turn out to be! Needless to say, we have a lot leftover. Not that I’m complaining. 😉

Here are the recipes!

Vegan Peperoni Pizza Stromboli

Makes one large stromboli, 6-8 large slices. When I asked Craig how much this serves he said about three fairly gluttonous people. So I would say around 5-6 normal hungry people.

  • 1 recipe whole wheat pizza dough
  • 2 cups your favorite pizza sauce
  • 284 grams vegan soy mozzarella cheese, grated
  • 30 slices vegan pepperoni
  • 2 tablespoons (1/2 a recipe) Garlic Herb Oil for brushing (recipe below)

Garlic Herb Oil

  • 1/4 cup sunflower oil
  • 1 1/2 teaspoons oregano
  • 2 1/2 teaspoons garlic powder
  • 1 teaspoon sea salt

Whisk all ingredients together in a small dish until combined.

Prepare the whole wheat pizza dough. Once the dough has risen, preheat the oven to 400°F, punch it down and roll it out onto a lightly floured surface into a 2 ft by 1 ft rectangle. Spread on the pizza sauce and sprinkle on the grated soy mozzarella cheese, leaving a one inch space of the dough without toppings around the edges.

Put on the pepperoni slices.

Fold the one inch area of dough inward on each side.

Roll the dough as tightly as possible into a large log and place on a parchment paper lined baking sheet.

Slice the top of the dough with a knife and brush with the 2 tablespoons of Herb Garlic Oil.

Bake for 25-30 minutes, until lightly browned.

Allow to cool a while before slicing.

Garlic Spinach Onion and Cheese Stromboli

  • 1 recipe whole wheat pizza dough
  • 2 tablespoons canola oil
  • 1 medium yellow onion, diced
  • 4 cloves garlic, pressed
  • 284 grams vegan soy mozzarella cheese, grated
  • 2 large handfuls (about 4 cups) fresh baby spinach, chopped
  • 1 recipe Garlic Herb Oil

Prepare the whole wheat pizza dough. While the dough is rising, heat a small skillet on medium heat with the canola oil. Saute the diced onion and pressed garlic for 5-8 minutes, until soft. Remove from heat and set aside.

Preheat the oven to 400° F. Roll the dough out into a large 2 ft by 1 ft rectangle and brush the dough with half of the Garlic Herb Oil, leaving one inch of the dough around the all edges of the rectangle unbrushed. Spread on the sauteed onion and garlic.

Sprinkle on the grated soy mozzarella cheese.

Top with the chopped spinach.

Fold the corners of the dough inward.

Roll the dough as tightly as you can into a large log and place on a parchment paper lined baking sheet. Make a few slices on the top of the rolled dough and brush with the remaining Garlic Herb Oil.

Bake for 25-30 minutes, until lightly browned.

Allow to cool a while before slicing.

I just realized upon typing out this recipe, that I make this look so easy! This afternoon it did not seem very easy to me when I had a screaming baby demanding me to pick her up while my hands were covered in flour and I was quickly trying to snap pictures of the recipe.

She has not been feeling very well the past few days and neither have the rest of us. Good thing pizza and cookies make everything better!

Tonight I think we will take it easy and watch a movie. Any suggestions on good clean family movies? Do they exist?

  1. Awwww poor baby. Even if nobody is sick, NOBODY feels good in a house that baby is sick in, for multiple reasons! Hope she feels better soon.

Also I’m coming to steal your leftovers. Brilliant idea! I seriously love it.

How were the vegan pepperoni in this? Whenever I’ve topped them ON pizza they were much too dry to enjoy. Although I’d probably be leaning towards the spinach one anyway. Yum!

    • Thanks Izzy! She slept well last night so I am hoping for a better day today. I didn’t notice that the pepperoni were dry and the kids gobbled this up. I can’t decide which is better because they are both very good. The best part about this recipe is the dough, especially brushed with that Garlic Herb Oil. It makes the top all crispy and garlicky. Mmmm… Now I want some more!

  2. We love pizza, and this rendition looks so good! I’ll have to try it soon… Was I not reading the recipe close enough, or does the dough really take only 10-20 minutes to rise?
My all time favorite family movie is The Princess Bride. Action, romance, and completely clean.
Regarding vegan pepperoni being too dry. Try layering the cheese over it. Personally, I like it dry, and have learned to keep the pepperoni on top to prevent it from being too moist.

    • Thanks Starr! Let me know how you like it if you do try it. The dough takes an hour to rise. You might have looked at the quick rise dough recipe link. This recipe uses the calzone pizza dough. 🙂

  3. I can’t seem to find the recipe for the strawberry shortcake cookies, is that on here? When I searched it, it brought me back to this post! I love your blog and read them all!

  7. Great pizza stromboli recipe! All 3 of my Littles devoured it and wanted more. It did take a bit of time and effort on my part, but it was worth the it in the end for all the yumminess. Thanks!
