Yesterday it was a cooler, rainy day so I decided to make a soup! I have been meaning to do something with wild rice these days and thought that mushrooms would pair beautifully.
Miso Wild Rice and Mushroom Soup
This soup is a bowl of beautiful! The wild rice and mushrooms make this a very earthy soup, with very subtle miso and onion flavors. This recipe reminds me a lot of how I ate when I was experimenting with a macrobiotic diet. Very simple, with simple wholesome ingredients.
Serves 6-8
Ingredients
- 1 cup uncooked wild rice blend
- 2-1/2 cups water
- 3 tablespoons sunflower oil
- 1 medium yellow onion, diced
- 6 green onions, sliced thinly
- 8 button mushrooms, diced
- 6 cups water
- 1/4 cup miso (I used mugi/barley)
- 2 teaspoons sea salt
- 1/8 teaspoon black ground pepper
Directions
Place the wild rice and water in a medium saucepan and bring to a boil. Reduce the heat to low, cover and simmer to cook for 50 minutes. After the rice has been cooking for 30 minutes begin to prepare the soup. In a large soup pot saute the yellow and green onions in the sunflower oil for 5-7 minutes until soft and fragrant.
Add the diced mushrooms along with 1/4 cup of water and cook 5 minutes more, stirring occasionally until mushrooms begin to soften.
Add the remaining water and the cooked rice and bring everything to a light boil. Remove 1 cup of the boiling water and place it in a small dish along with the miso and whisk until dissolved. Add the miso mixture to the soup mixture. Add salt and pepper. Reduce heat to low and simmer 5-10 minutes more to bring all of the flavors together. Serves 6-8
For the past few weeks I have been busy organizing my recipes. I have so many now (and so many I still want to post up on the blog ) so I am trying to get them all together and organized. Sadly a lot of the recipes get eaten too fast before I get a chance to photograph them. I have also been printing my pictures to go together with them and hope to one day make a cookbook!
