When I think of holiday flavors, I think of coconut, cranberries, orange, nuts, chocolate and mint. And I think of spices like ginger, cloves, cinnamon, and nutmeg.
Yesterday’s blog post covered chocolate and mint and today I am introducing two healthy holiday granola recipes to enjoy and/or share.
Just think of how lovely a healthy holiday flavor granola recipe is to enjoy on holiday mornings to keep you energized for all of the things you have to do and places you have to be. It also make a great snack!
Toss the recipe into a mason jar and tie it with a festive ribbon and you also have a delicious and nutritious gift to give to the ones that you love! ❤
Coconut Cranberry Pecan Spice Granola
This is one of my favorite granola recipes for sure! I love the combination of coconut, cranberry and pecan, and the spices make it that much more delicious! I made this recipe 3 times before I finally got a picture of it to share because we kept on eating it up!
Makes 6 cups of granola
Ingredients
- 3 cups large flake or quick oats (whichever you prefer. I prefer the quick oats these days.)
- 1 cup whole wheat or spelt flour
- 1 teaspoon baking soda
- 1/4 teaspoon fine sea salt
- 2 teaspoons ground cinnamon
- 1 1/2 teaspoons ground ginger
- 1/4 teaspoon ground cloves
- 1/3 cup unsweetened medium shredded coconut
- 1 cup dried cranberries
- 1/2 cup pecan pieces
- 2/3 cup pure maple syrup or agave
- 2/3 cup sunflower or coconut oil
Directions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Place the oats, flour, baking soda, sea salt, spices, cranberries and pecans together in a medium mixing bowl. Stir to combine.
- Add the maple syrup (or agave) and oil and stir to combine.
- Place onto the baking sheet and bake for 16-18 minutes, until slightly golden brown, rearranging the granola halfway through the baking time, if desired.
- Allow to cool completely before removing from the baking sheet. Store in a container or mason jar.
Ginger Snap Granola
Makes 7 cups
This recipe packs quite a ginger and cinnamon kick, like a real old-fashioned ginger snap cookie!
Ingredients
- 4 cups large flake or quick oats
- 1 cup whole wheat or spelt flour
- 1 teaspoon baking soda
- 1/4 teaspoon fine sea salt
- 3 teaspoons ground ginger
- 2 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1/2 cup pure maple syrup or agave
- 1/4 cup black strap molasses
- 2/3 cup sunflower or coconut oil
Directions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Place the oats, flour, baking soda, sea salt and spices together in a medium mixing bowl. Stir to combine.
- Add the maple syrup (or agave), molasses and oil and stir to combine.
- Place onto the baking sheet and bake for 16-18 minutes, until slightly golden brown, rearranging the granola halfway through the baking time, if desired.
- Allow to cool completely before removing from the baking sheet. Store in a container or mason jar.
