Coconut Cranberry Pecan Spice Granola

This is one of my favorite granola recipes for sure! I love the combination of coconut, cranberry and pecan, and the spices make it that much more delicious! I made this recipe 3 times before I finally got a picture of it to share because we kept on eating it up!

Makes 6 cups of granola

Ingredients

  • 3 cups large flake or quick oats (whichever you prefer. I prefer the quick oats these days.)
  • 1 cup whole wheat or spelt flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 2 teaspoons ground cinnamon
  • 1 1/2 teaspoons ground ginger
  • 1/4 teaspoon ground cloves
  • 1/3 cup unsweetened medium shredded coconut
  • 1 cup dried cranberries
  • 1/2 cup pecan pieces
  • 2/3 cup pure maple syrup or agave
  • 2/3 cup sunflower or coconut oil

Directions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Place the oats, flour, baking soda, sea salt, spices, cranberries and pecans together in a medium mixing bowl. Stir to combine.
  3. Add the maple syrup (or agave) and oil and stir to combine.
  4. Place onto the baking sheet and bake for 16-18 minutes, until slightly golden brown, rearranging the granola halfway through the baking time, if desired.
  5. Allow to cool completely before removing from the baking sheet. Store in a container or mason jar.
