Please excuse my absence, I’ve been busy making a cake and nursing myself back to good health. I am so much better today, thanks to mornings of juice fasting and long walks in this amazing October weather. Life is very good.
I have also been experimenting with some raw food recipes and have found that they have made me feel more energetic and alive. For those of you who don’t know about the idea of a raw food diet you can read about it here. I find it quite interesting and have noticed that for myself, it makes a big difference. While, I don’t think I would even go 100% raw (because it is time-consuming and I have a family to feed), I do believe that incorporating raw foods in your diet is very beneficial to your health. Who wouldn’t benefit from more fresh fruits and veggies and raw nuts and seeds?
So, I wanted to share a recipe I had always been meaning to try out for Raw Pasta. I followed the guidelines of the recipes, but made it my own.
Zucchini Pasta with Raw Marinara
For the Pasta
- 1 medium zucchini, shredded into long pasta “noodles” with a vegetable peeler
- 1 c. sun-dried tomatoes
- 1 c. water
- 1 c. fresh tomatoes (I used cherry tomatoes)
- 2 medium carrots grated in a food processor
- 3 T. olive oil
- 2 T. shoyu (or soy sauce)
- 2 t. oregano
- 1 1/2 t. rosemary
- 1 t. thyme
- 2 t. basil
- 2 cloves of minced garlic
- Soak the sun-dried tomatoes in 1 c. of water for 30 minutes.
- Meanwhile, shred the carrots with your food processor blade.
- Combine the sun-dried tomatoes and soaking water, fresh tomatoes, and olive oil, shoyu, garlic and spices together in the food processor with the carrot.
- Process on medium speed until tomatoes are well-blended.
This recipe was super easy! I enjoyed it and will probably make it again for lunch sometime for myself. The marinara is awesome. I think I will even make that just to have with our regular pasta sometimes.
A lot of raw food recipes intimidate me because of all the sprouting, soaking and dehydrating. If you were going to get into raw foods, you would certainly have to have your meals planned. I have been collecting a lot of raw food recipes that don’t require so much preparation to try out every now and then. There are so many delicious desserts out there that are made raw too that look so yummy. Like my 5 Minute No Bake Brownies or Banana Soft Serve. Both considered raw and both completely amazing!
Another raw food I love to eat is Green ‘Eggs’ On Toast.
Today we have the big birthday extravaganza, for my daughter Autumn who is turning 6! Can’t believe how time flies and how big both of my girls have gotten.

Lately we’ve been going out for so many walks all together in this beautiful October weather.
On our walks, we pick up garbage/recyclables. I know, I know, sounds weird, but when I walk by, I just can’t seem to leave a can sitting on the side of the road. Now Autumn is really into it too, which I actually think is a good thing. I am glad my kids are learning the importance of keeping the earth clean. The other day, we got a wagon full of pop bottles, cans and other recyclables.
Here is what we collected over the past 4 days.
We dumped it on the lawn to see how much it really is. Made me think about how much garbage we all really accumulate. If this is just the recyclable materials that we collected in 4 days, think of how much is going into the landfills! It makes me sad to think that so many people still do not recycle and so many people continue to litter. It amazes me how people continue to throw away their coffee cups and pop bottles. Don’t we know enough by now, to not do this?
You are probably thinking, “Doesn’t she care that people see her picking up garbage?” Might I remind you I have only 1/3 inch of hair! I just can’t bear the thought of all that garbage going into the river and if I am walking by it, I see no reason why I can’t pick it up. Besides, if people do see us, maybe it will get them thinking. Maybe if the people who threw their trash out the window saw that sweet little girl pick it up from the side of the road they would think differently next time.
Anyway, I am going to go prepare snacks for the party and share with you my tips for planning a vegan/eco-friendly birthday party in my next post. I will however, leave you with a sneak peak at the birthday cake that took me seven hours to make!I made everything from scratch, which is time consuming, but I believe is way healthier than buying a cake from the store.

Look at that happy strawberry girl! She told me that she loves it, so that makes it all worthwhile. Besides birthdays only come once a year.
Please think before you litter. Think about the future health of our planet. It is our children and theirs who will inherit it and I believe they deserve a healthy one. If you see garbage or recycling that you can pick up, please do and remember, “I am only one, but still I am one, I cannot do everything, but I can do something and because I cannot do everything, I will not refuse to do something I can do.” – Edward Everett Hale.
