Chocolate Chip Banana Bread

Chocolate Chip Banana Bread

Filled with the goodness of bananas and sprinkled with sweet chocolate chips, this is yet another one of my kids’ favorite snacks.

Ingredients

  • 2 cups whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 2 large(or 3 medium) overripe bananas
  • 1/2 cup unsweetened almond milk (or other non-dairy milk)
  • 1/3 cup sunflower oil
  • 1/3 cup pure maple syrup
  • 1 teaspoon vanilla
  • 3/4 cup vegan chocolate chips

Directions

Preheat oven to 350°F. In a large mixing bowl combine the dry ingredients. In a separate mixing bowl, mash the bananas and add the milk, oil, maple syrup and vanilla, stir until combined. Add the chocolate chips. Add the wet ingredients to the dry ingredients and stir until just combined. Do not over mix or your bread will not rise properly. Place the batter into a 9×5 loaf pan and bake for 40-45 minutes until golden brown. the loaf is done when you poke it with a toothpick and it comes out clean.

  1. I just made this today and my whole family (who aren’t vegan at all) loved it and were very surprised to find out it didn’t have refined sugar etc. in it! I’m going to make it again tomorrow because we’ve almost eaten it all! Thank you so much for this recipe 🙂

  4. This turned out to be really good. I also tried the carrot and walnut muffins. I added some golden raisins and they too were really good.

Thank you for great recipes and inspiring words.
