I baked today!
And I had my helpers of course! We decided to make apple crisp. OH MY GOODNESS! I never should have done this. Now I remember how much I love baking and eating it! The smell of this baking was torturous. Cinnamon, maple syrup, apples and oats are all of my favorite things. How could a girl resist? In my mind while preparing it I was making it for my hubby, but it turned out to be mostly for me (and the baby of course). 😉 I can still use that excuse for 5 more days.
Maple Cinnamon Apple Crisp
I love the smell of this apple crisp baking in the oven! The sweet apple slices are delicious bathed in maple syrup, sprinkled with cinnamon and baked to perfection under a crispy cinnamon oatmeal topping. Are you drooling yet?
Ingredients
- 8 medium apples, peeled, cored and sliced
- 1/4 cup pure maple syrup
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground nutmeg
Cinnamon Oatmeal Topping
- 2 3/4 cups rolled oats
- 1 cup whole wheat flour
- 1 tablespoon ground cinnamon
- 2/3 cup pure maple syrup
- 3/4 cup sunflower oil
- 1 teaspoon pure vanilla extract
Directions
Preheat the oven to 350°F. Toss the sliced apples with the maple syrup, cinnamon and nutmeg in a large mixing bowl then place them into a 2 1/2 quart baking dish. I sprinkled even more cinnamon on top because I love cinnamon so much.
In a medium mixing bowl, combine the oats, flour and cinnamon. Add the maple syrup, sunflower oil and vanilla and mix until combined.
Sprinkle the oatmeal mixture evenly over top of the apples.
Cover and bake for 40 minutes. Remove from the oven, uncover, and bake 25-30 minutes more, until the apples have softened and the topping is crisp.
Serve with Banana Soft Serve or your favorite non-dairy ice cream, die and go to heaven.

I love desserts like this because even if I end up indulging, I know that it is in healthy ingredients and that I am feeding my body well.
