Today’s salad was tossed together in a hurry after I finished my 50 minute workout. I quickly got into the kitchen and threw together some of my favorite things and figured I could do no wrong. This salad is my favorite of the week so far. It starts with a bed of spinach, followed by diced sweet, juicy apple and crunchy cucumber. Pecans and sunflower seeds add some healthy fats and protein and a drizzle of Maple Balsamic Vinaigrette makes this more than a satisfying salad.
Apple Pecan Spinach Salad with Maple Balsamic Vinaigrette
Serves one (multiply portions as needed)
- 2 handfuls baby spinach
- 1 small gala apple, diced
- 1/3 cup diced cucumber
- 1/4 cup chopped pecans
- 2 tablespoons sunflower seeds
- 2- 3 tablespoons Maple Balsamic Vinaigrette (recipe below)
Maple Balsamic Vinaigrette
- 3 1/2 tablespoons balsamic vinegar
- 2 tablespoons pure maple syrup
- 2 1/2 tablespoons sunflower oil
Makes 1/2 cup vinaigrette
