No-Bake Avocado Lime Pie with Almond Crust

Fool me once,

shame on you.

Fool me twice,

shame on me.

I find it pretty hilarious that I have fooled the girls twice now into eating avocados without them knowing it. Today I made a delicious no bake lime pie made from avocados with a crust made from ground almonds. I have been planning this recipe ever since the Creamy Chocolate Pudding that they loved.

I got them all excited about the fact that I was making a lime pie and when it was time to make the filling I made sure that they were busy playing while I transformed the avocados into a lime pudding filling. When the pie was done they devoured it. He he he. 😉

No-Bake Avocado Lime Pie with Almond Crust

An easy, no-bake pie made with avocados, lime and pure maple syrup on a  ground almond crust. A super healthy, sugar free, delicious dessert!

Makes one 9 inch pie

Avocado Lime Pie Filling –

  • 3 ripe avocados
  • juice and zest of two fresh limes
  • 1/2 cup pure maple syrup
  • 2 teaspoons vanilla

Almond Crust –

  • 2 cups whole roasted almonds
  • 1/4 cup sunflower oil
  • 1/4 cup pure maple syrup

Cut the avocados in half, remove the pits and place the flesh of the avocados into the food processor. Add the lime juice, lime zest, maple syrup and vanilla and process on high until smooth.

Place the avocado lime filling in a bowl in the fridge while you prepare the crust.

Prepare the crust by placing the almonds in the (washed) food processor and blend until coarsely ground.

Place the ground almonds into a medium mixing bowl and add the sunflower oil and pure maple syrup. Mix until combined. Press the crust mixture into a 9 inch pie pan.

Pour the avocado lime filling onto the prepared almond crust, spreading evenly with a spatula. Place the pie into the freezer to chill for 30-40 minutes.

Cut into 6 equal pieces and eat!

The avocado lime filling is also great on its own as a pudding too. If you liked the chocolate avocado pudding you will like this one too! It is creamy and smooth with a perfect lime flavor.

He he he.
