4-Ingredient Lemon Hemp Balls

Since I still have so much hemp seed, today was another recipe dedicated to the hemp seed.

I decided to make hemp balls using medjool dates, walnuts and hemp seed. I was originally going to make them chocolate flavored by adding cocoa powder, but I figured that there are so many recipes for a chocolate raw or vegan ball and I have so many chocolate recipes already (not that you can have too many ;)). I had a lemon in the fridge so I decided to zest it up and make them lemon hemp balls!

I really much prefer calling them bites, like my No-Bake Cranberry Almond Oat Bites because well, it just sounds so much better. Nevertheless, I decided to go with the word balls in this recipe because that is what they are.

And they are delicious balls too! ๐Ÿ™‚

4-Ingredient Lemon Hemp Balls

A sweet lemon treat made with just four natural and delicious ingredients. Walnuts, hemp seed, medjool dates and lemon. These taste just like lemon pie, but are of course much healthier and so much more simple to prepare. A new family favorite!

Ingredients

  • 1 cup chopped walnuts
  • 1/3 cup shelled hemp seeds + 1/3 cup shelled hemp seed for rolling the balls in
  • 12 medjool dates, pitted
  • juice and zest of one lemon (1/4 cup lemon juice, 1 tablespoon lemon zest)

Directions

Place the walnuts, 1/3 cup of hemp seed together in a food processor and blend until crumbly.

Add the pitted dates, lemon juice and lemon zest and process a minute or so more until combined.

You may have to scrape down your food processor a few times to make sure that everything gets combined. Place the mixture in a small bowl and into the fridge to set for 15-20 minutes so it won’t be too sticky to handle. Meanwhile place the 1/4 cup of hemp seed into a small bowl. Once the mixture has set, remove it from the fridge and form it into golf ball-sized balls with your hands. Roll each ball into the hemp seed to coat and then between your hands once again to make sure the seeds stick well to the outside of the ball.

Repeat to make 12 balls. Store in a container in the fridge.

These were soooooooooo yummy! They taste just like lemon pie and have such an amazingly delicious lemon flavor. It was hard not to eat them all. I was hesitant to put so much lemon zest, but it really does make these so unbelievably good.
