So I have been working really hard to create good habits for myself and one of them is to cook meals with lots of veggies and cut back on the nut butter. Peanut, cashew, almond… I am seriously addicted to them all. I mean addicted as in a jar of the stuff only lasts 3 days in our house, if it’s lucky (or if Craig hides it on me).
Anyway, I had gone 3 whole days nut butter free, but today something was calling my name down the aisle of the grocery store. Peanut Butter. I walked right on by as I heard it whisper “buy me, eat me,” and I felt so strong. We left the store with a ton of fruits and veggies and other whole grain goodies. Then we were walking by the other grocery store (why must there be 2?) and I suddenly imagined what all my possibilities would be with that Peanut Butter tonight.
I came up with all these justifications in my head, “Craig’s not home, you don’t really have to cook a meal. You ran 11 miles yesterday. It would be so convenient and delicious.” The next thing I know I am paying for two jars of Kraft natural peanut butter. They just happened to be on sale 2 for $7.98. I knew that one wouldn’t last long with me and wanted Craig and the girls to enjoy some as well. See how thoughtful I am? Or maybe I will just admit that it was a serious moment of weakness.
But really, what is better than this…?

BANANA SOFT SERVE
Just frozen over-ripe bananas! Sugar-free, Dairy-free, Fat-free Ice Cream!
- 2 Frozen medium over-ripe bananas
- 1/4-1/2 cup unsweetened almond milk
It is also super easy to make…
Just throw the frozen bananas in a food processor.
Process for 30-60 seconds, until the bananas are broken into little bits. Add the almond milk and process again until a soft ice cream consistency forms. You will have to scrape down the sides a few times throughout processing.
VOILA!
The girls really actually enjoyed this “dinner”
Kesa kept on saying “we’re peanut butter monsters mama!”
Afterward, we got busy peeling more bananas for more banana soft serve.
Luckily, Autumn loves to peel the bananas. Little monkey!
