It is HOT outside where we are. We haven’t gone to the beach yet this year, but the girls are super ready! I think I am too. Last year we did so much swimming and pretty much lived at the beach. I loved swimming while I was pregnant and feeling Serafina kicking around inside of me. There is also a nice little park where we like to go so it is always so much fun for the kids and only a 10 minute drive from our house.
Yesterday afternoon I decided that I wanted to make a new popsicle recipe for them to enjoy in this heat. I decided to try out raspberry and lemon together since we already have made Strawberry Kiwi, Tangelo Creamsicles and Fudgesicles. I also still had raspberries in the freezer to get creative with and the thought of lemon and raspberry seemed so delicious to me.
Lemon Raspberry Freezer Pops
A delicious sweet and tangy frozen treat. Perfect for hot summer days.
Makes 8
Ingredients
- 3 cups fresh or thawed from frozen raspberries
- juice of one lemon (1/4 cup lemon juice)
- 1/3 cup pure maple syrup
Directions
Place the raspberries, lemon juice and maple syrup in a food processor.
Blend until smooth.
Pour into popsicle molds.
Sneak a taste and think that no one noticed.
Freeze for at least 2 hours.
Serafina loved these, as she does with all the fruit popsicles I make. Lucky she has such a generous big sister.
