No-Bake Cashew Butter Cookies {Date Sweetened}

This is our garden!

Correction: This is our garden after an hour of meticulously picking out little weeds.

It finally decided to stop raining for a day and so my hubby was in there picking weeds. It is hard to even tell what, (if anything) is growing in there other than the weeds. Autumn liked to help with the weeding. Kesa liked to watch.

We do have these potato plants though and my bell pepper plants seem to be doing alright too.

We don’t use anything in our garden, just let it be natural. We did that last year too, but the weeds were never like this. What Craig ended up doing was digging up some rows (bye bye carrots :() and planting some new seeds. We will just have to see what happens.

I think that it would be sad to not have anything work out. The garden was so beautiful last year and so much fun for the girls. I am sure if they have potatoes they will be happy though. They could probably live off of potatoes forever if I let them.

Today I came up with a new wholesome cookie recipe! A no bake, flourless, sugar-free (even maple syrup-free) kinda wholesome.

I figured that since it is the first day of summer, why not post a no bake recipe that you can keep on file for the days you want a cookie, but are in no hurry to turn on your oven. I know that I like the sound of that!

No-Bake Cashew Butter Cookies

A wholesome no-bake cookie loaded with only goodness! Perfect for summer or anytime you are craving a quick and simple sweet treat.

Ingredients

  • 1/2 cup whole roasted almonds
  • 1/2 cup rolled oats
  • 1 cup pitted medjool dates (about 11)
  • 1 tablespoon ground flaxseed
  • 2 tablespoons water
  • 1/2 cup cashew butter
  • 1 teaspoon pure vanilla extract

Directions

Place the almonds and oats together in a food processor and process on high until coarsely ground.

Add the pitted dates and process again until the dates are fine and incorporated.

Finally add the ground flaxseed, warm water,Β cashew butter and vanilla and process again until a nice dough forms. The dough should be able to stick together when you pinch it between your fingers.

Transfer the dough to a medium-size mixing bowl and then roll the dough into walnut-size balls. Press each ball down onto a baking sheet with the palm of your hand. Repeat to make 15 cookies.

Use a fork to make a cross wire design on the top of each cookie.

Eat!

I still have that delicious new fruit popsicle recipe to share too, but for today it was a toss up between cookies and popsicles.
