I didn’t say I didn’t have any cookies yesterday. Geesh! I am not that strong!
No-Bake Chocolate Peanut Butter Coconut Oaties
Makes 24 cookies
Ingredients
- 3 cups rolled oats
- 1/2 cup cocoa powder
- 1/2 cup medium unsweetened shredded coconut
- 1/2 cup natural crunchy peanut butter
- 1/4 cup vegan margarine
- 1/2 cup maple syrup
- 1/2 cup almond milk
- 2 teaspoons vanilla
Directions
Line a baking sheet with parchment paper. In a medium sized mixing bowl, combine the oats, cocoa powder, coconut and peanut butter. Mix and set aside.
In a saucepan on medium heat, melt the margarine, then add the maple syrup, milk and vanilla. Remove from heat and allow to cool a little, then pour the margarine/syrup mixture over the oat/peanut butter mixture and stir. Allow to sit a few minutes to cool and set before getting your hands in there, otherwise the mixture will be too sticky to handle.
Roll the oat mixture into tablespoon-sized balls and place onto the baking sheet.
Press the cookies down slightly with your hands.
Place the cookies into the fridge to set for 15-20 minutes.
Eat!! ๐
Keep these in a container in the fridge. They are best when they are cold. I like to put them in the freezer and eat them frozen too.
