We had a wonderful weekend filled with sunshine and fun! Friday and Saturday we spent at the park and the beach. We went for lots of walks and bike rides together and the girls especially enjoyed staying over night at their grandparents in the camper.
Autumn even got a tire swing with love from Craig that she is crazy about. Sometimes I wonder how life could get any better.
Our garden is beginning to grow too! We have peas, beans, corn, lettuce, onions, beets and carrots sprouting up already. I am so excited for all that this summer has in store and all of the amazing recipes that I have to share. There are so many recipes and so little time, but I promise to keep them coming. This one is a definite keeper and so easy to prepare.
BBQ Spinach, Mushroom, Pineapple and Onion Pizza
This is a pizza experience that you will never forget!
Makes 2 medium pizzas
Ingredients
- 2 medium spelt or whole wheat pizza crusts
- 1 cup Bull’s Eye Hickory BBQ Sauce (or your favorite BBQ sauce)
- 2 handfuls of spinach
- 8 white mushrooms, sliced
- 1 cup pineapple tidbits
- 1 small red onion, diced
Directions
Preheat oven to 425F. Spread 1/2 cup of the BBQ sauce evenly across each pizza crust.Top with spinach, sliced mushrooms, pineapple and diced red onion. Place in the oven to bake 12-15 minutes, until crust is browned and toppings are cooked.
For the next few days they are forecasting rain and zero sunshine. I am so glad that we got the most out of the sunny weekend but am happy to be home today and back into our regular routine. There really is no place like home! The girls have been asking for cookies again. Autumn said to me this morning, “You never make cookies anymore!” I am thinking what, since last Thursday? What kind of mom leaves their children deprived of cookies for 4 days? I guess I know how I will be spending the rainy days.
