Do you believe in magic?
I saw a recipe for fruit salad tossed with whipped cream in a magazine a while back and thought, I have to make that vegan! Yesterday I finally got all the ingredients that I needed and magic happened in my kitchen.
Sweet, creamy dairy-free magic!
Summer Fruit Salad with Coconut Whipped Cream
Ingredients
Fruit Salad –
- 1/2 cantaloupe, chopped
- 1/2 honeydew melon, chopped
- 2 kiwis, diced
- 3 cups chopped strawberries
- 1 1/2 cups red grapes
Coconut Whipped Cream –
- 1 (400ml) can full fat coconut milk, refrigerated overnight upside down
- 2 tablespoons pure maple syrup
- 1 teaspoon pure vanilla extract
Directions
Open the chilled can of refrigerated coconut milk and spoon the coconut cream from the top of the can into a medium mixing bowl. The water will be at the bottom of the can and can be saved for a smoothie or other recipe.
Add the maple syrup and vanilla and beat for about 3 minutes, until thick and creamy liked whipped cream.
Place all of the fruit salad ingredients together in a separate large mixing bowl.
Add the coconut whipped cream.
Stir to coat each piece of fruit.
Die and go to heaven.
The girls absolutely LOVED this!
The coconut whipped cream is so creamy and delicious! Although it is not my own genius, my version is sweetened naturally with pure maple syrup. I have major plans for it in future recipes.
It is also good just licked out of the bowl! 😉

There’s a birthday coming up, for which I was planing to make a whip cream topped cake. I’ve made cashew whip before and was planning to do that again, but this looks SO much easier. Thanks for the idea! 😀

It’s great! You could sweeten it with powdered sugar too or any other natural sweetener. The addition of vanilla is amazing as well.

I’m going to try this one because I love the taste of whip cream but the price of vegan whipped stuff is a bit too much for me. Yum! Coconut!
