You know the saying don’t knock it til you’ve tried it? Well…
Meet wiener soup.
It may look strange, but it is soooo good. This is something that I grew up eating. My mom used to make this for my brothers and I for dinner and we loved it. She said that she got this recipe from my dad who was making it for dinner when she was working late. He got it from his mom who used to make it for him as a boy in Finland. So you could say that this is a family recipe.
I recently thought of this soup while dreaming up recipes and decided that it could be made perfectly vegan with the tofu hot dogs my girls love so much. Plus, it is loaded with veggies of all colors. Really, really don’t knock it til you’ve tried it. And do try it, especially if you have kids.
Rainbow Veggie Wiener Soup
Makes one large pot of soup, serves 8-10
- 10 cups water
- 5 tablespoons vegetable bouillon powder
- 1/2 teaspoon sea salt
- 1/2 teaspoon pepper
- 1 medium yellow onion, diced
- 4 russet potatoes, peeled and chopped
- 3 medium carrots, peeled and coined
- 4 ribs of celery, chopped
- 2 bell peppers, diced (colors of your choice)
- 6 tofu dogs, sliced (I use Yves)
Directions
Bring the 10 cups of water to boil in a large pot with the diced onion, vegetable bouillon, salt and pepper. Add the chopped potatoes, coined carrots and chopped celery. Boil for 5 minutes. Add the peppers and tofu dogs and boil 5-10 minutes more until vegetables are soft.
This soup is really easy and extremely flavorful. A definite favorite around here. 🙂
