‘Honey’ Dijon Tofu Salad Sandwich

Today’s lunch was pretty amazing and extremely addictive in my opinion. We really enjoy Tofu Salad sandwiches around here. They are a great way to get in protein and make a very satisfying meal, especially with a side salad or cut up veggies. I have been wanting to try a new recipe with tofu and I of course use maple syrup in nearly all of my recipes so ‘Honey’ Dijon Tofu Salad was born.

How I ever lived without this in my life, I do not know.

‘Honey’ Dijon Tofu Salad Sandwich

  • 2 slices whole grain bread
  • 1/2 cup ‘Honey’ Dijon Tofu Salad (recipe below)
  • handful of baby spinach leaves


Toast your bread. Top one toasted slice with tofu salad and the other with the spinach leaves.

Put it together.


Behold the beauty.

‘Honey’ Dijon Tofu Salad

Makes a nice big batch, enough for many sandwiches (believe me you will want them)

  • 350g extra firm tofu
  • 300g soft tofu
  • 1/2 cup old-fashioned dijon mustard
  • 1/3 cup pure maple syrup
  • 1/3 cup diced yellow onion
  • 3 ribs of diced celery (about 1 cup)


Bring a medium pot of water to boil. Slice the extra firm tofu into 6 equal strips and boil the tofu for 5 minutes to soften it up. Drain the tofu and allow to cool. Meanwhile place the soft tofu, dijon mustard and maple syrup in a food processor and process for about a minute, until smooth. Crumble the cooled extra firm tofu into bite sized pieces with your hands into a mixing bowl. Pour the ‘Honey Dijon sauce over top. Add the diced onion and celery and mix until combined.

This is super yummy!  Once you try it you are sure to fall in love.
